RECIPE: Jamaican Jerk Meatballs with a Creamy Salsa Verde Sauce

If you’re anything like me, then you’re definitely tired of the same old same old for dinner; I get bored very easily.

I wanted to create a dinner recipe that would be somewhat unique, super flavorful and would leave me with easy-to-reheat leftovers. Skewers are perfect for leftovers, easy to cook and fairly quick prep.

If you’re worried about too much heat (which, honestly, I wouldn’t categorize this meal as “spicy”), feel free to cut back on the Jamaican Spice Cabinet Sauce (this goes in the meatballs) or the Sweet Verde Fire Sauce (this goes in the creamy sauce you’re drizzling over the meatballs).

These flavors all pair extremely well together, so I would not suggest making swaps or skipping the sauce – they all need each other.

Another cool thing about this recipe is that I’m giving you directions on how to cook it three different ways: on your grill, in a cast iron pan or in your Ninja Foodie Air Fryer. So whichever option you have at home, this recipe will work for you!

These are also grain free, gluten free and primal.

JAMAICAN JERK MEATBALLS WITH A CREAMY SALSA VERDE SAUCE

Serves 2 people

Ingredients:

For the Meatballs:

-1 lb. ground beef

-1 egg

-2 tbsp. BOLD SAUCE CO. Jamaican Spice Cabinet Sauce – buy it here, and use coupon code GINGER to save 10% (here’s your friendly reminder that if you want less kick, just add half of this measurement to your balls).

-1/2 tsp. pepper

-1/2 tsp. salt

-1/2 tsp. cumin

-1/2 tsp. thyme

-1/2 tsp. dried parsley

-1/2 tsp. garlic powder

-1/4 tsp. cinnamon

-1 tbsp. coconut flour

For the Sauce:

-1/2 lime, juiced

-3 tbsp. olive oil

-1/4 tsp. garlic powder

-2 tbsp. full fat plain Greek yogurt

-1/4 tsp. salt

-1/4 tsp. pepper

-small handful of cilantro, roughly chopped

You’ll also need:

-Skewers

-1 tbsp. butter

-1 green pepper, cut into cubes

-1 cup pineapple chunks

Directions:

This is kind of a choose-your-own-adventure recipe. Meaning, at step 3, you’ll skip down to the cooking method you plan to use.

Step 1: In a medium mixing bowl, add meatball ingredients and mix thoroughly. I suggest using your (clean) hands to do so. Form meat into 1.5″ balls.

Step 2: Chop your green pepper and pineapple in large chunks.

Step 3: IF YOU’RE USING THE NINJA FOODIE AIR FRYER

Preheat air fryer to 375 degrees on the bake setting.

Assemble your skewers with 2-3 balls, pineapple and green pepper chunks.

Arrange the skewers on the metal rack in the air fryer, making sure not to pile one on top of the other. Cook for 8 minutes.

Afterwards, up the heat to 400 degrees and switch to the air crisp setting. Allow to cook for another 3 minutes.

Step 3: IF YOU’RE USING A GRILL

Turn your grill on to a medium-high flame.

Assemble your skewers with 2-3 balls, pineapple and green pepper chunks.

Arrange the skewers in a single layer on the grill. Cook for 4 minutes, flip, and cook for an additional 4 minutes.

Step 3: IF YOU’RE USING A CAST IRON PAN

Place your cast iron pan over a medium flame and melt 1 tbsp. butter.

Assemble your skewers with 2-3 balls, pineapple and green pepper chunks.

Arrange the skewers in a single layer on the grill. Cook for 4 minutes, flip, and cook for an additional 4 minutes.

Step 4: Prepare your sauce.

In a small bowl, mix ingredients together and whisk. Drizzle over meatballs, and use extra as a dipping sauce for pineapple and green pepper.
