What’s a super easy and affordable way to entertain a toddler for a while? Believe it or not…Pick-your-own fruit.
Heading to a local farm for fruit picking (or pumpkins and squash in the fall!) gives toddlers a chance to burn off energy (lots of space to run), it helps build their confidence and independence, plus it improves dexterity.
We spent our whole summer doing whatever PYO was available, from strawberries and blueberries to peaches and straight into apples at the close of August.
And I. Am. Here. For. Apple everything. Thank God we have 35 pounds of apples…
BOURBON APPLE PECAN BREAD PUDDING

Ingredients:
-14 oz stale Brioche bread, cubed
Side note: don’t happen to have stale bread around? NBD. After chopping it up, dry it out slightly by baking at 400 degrees for like 6 minutes. It works best if you bake on a large surface, so you only have a single layer of bread.
You don’t want to totally toast the bread, just dry it out.
-2 to 3 medium-size apples (pink lady, gala, ginger gold and Granny Smith are all great choices for baking), diced OR very thinly sliced – your choice
-4 tbsp. butter, melted
-2 tbsp. bourbon
Side note: you can feel free to skip the bourbon if booze isn’t your jam. But, it does end up burning off (there’s no alcohol content remaining) and it leaves the dish with a nice spice.
-4 eggs
-2 cups milk
-2 tsp. vanilla extract
-1 tsp. apple pie spice
-1 tsp. cinnamon
-1 tsp. nutmeg
-1/2 cup coconut sugar
Side note: we use brown unrefined coconut sugar in our baking because it has a lower glycemic index than conventional sugar. This means your body doesn’t have the same response to it as it would otherwise – regular sugar causes your insulin to spike, resulting in sugar highs and weight gain. If you prefer regular sugar, use the same measurement.
-1 cup pecan halves, roughly chopped

Directions:
Step 1: preheat oven to 350 degrees. Meanwhile, cube your bread. Peel and chop your apples. Roughly chop pecans.


Step 2: grease a 9 x 13 glass baking pan. Don’t have one? We have this one and highly recommend it.
Step 3: In a lаrgе bоwl, whіѕk tоgеthеr the mіlk, eggs, vanilla extract, cinnamon, nutmеg, apple pie spice, ѕugаr and bourbon.
Step 4: stir in the apples and pecans.

Step 5: gently fold bread cubes into mixture.
Step 6: Pour into greased glass baking pan and bake for 30-40 minutes, until puffed and golden brown.

Prepare for your whole house to smell like absolute fall heaven!


Serve with a scoop of vanilla ice cream!
