Recipe: Raspberry Vinaigrette Dressing

It’s raspberry season in New England, and you know we love an excuse to support our local farms! So naturally, we packed up the kids and headed out to the fields to pick a ridiculous amount of raspberries. Six pounds, to be exact.

Rather than use the berries in some kind of sugary treat, we made a pact to find fun ways to incorporate them into our dinner recipes.

To complement this Summer Berry and Bacon Salad, we came up with a raspberry vinaigrette dressing that is not only delicious, but also free of additives, fillers and cheap oils…it’s just fresh, wholesome ingredients!

It’s super easy to make and only requires a few ingredients.

Ingredients: (yields approx. 4 oz of dressing)

-1/4 cup raspberries, puréed

-1/4 cup olive oil

-2 tbsp red wine vinegar

-1 tsp lemon juice

-honey, to taste

Directions:

Add all ingredients to a food processor or blender. Blend until smooth.

Store in fridge for up to one week.
